I found this video on BuzzFeed....



And I actually wasn't all that impressed with the ideas! There are SO MANY short-cut meals you can make from Trader Joe's and they're all way better than the ones in that video. Here are my favorites:


Spicy Thai Soup

1 box miso broth, 1 jar red curry sauce, 1 can coconut milk, green onions, cilantro, one package extra firm tofu. Heat broth, sauce, and 1/2 the can of milk until warm, add in diced tofu, cook until warm. Top with diced green onions and cilantro. Seriously this is AMAZING, I promise. If you hate tofu, bring the soup to a boil, add uncooked diced chicken, and cook the chicken through. To get fancy, serve with a lime wedge.


Truffle Mac and Cheese Bites

These look SO fancy, so serve them at your next party. Bake the frozen mac and cheese bites according to the directions on the box. Take them out of the oven and top with a drizzle of white truffle oil and some cracked pepper, and a sprinkle of smoked paprika. Bake for one more minute. Top with shredded 4 cheese blend.


Tofu Stir Fry

Diced frozen bell peppers, cilantro, hoisin sauce, soy sauce, rice noodles, and extra firm tofu. Saute the bell peppers first, with a couple dashes of soy sauce. When cooked, add noodles (the cooked kind you find in the cold section), a couple TBSP hoisin, and tofu. Saute until warmed through. If you hate tofu you can use steak tips available in the meat section.


Baked Gnocchi

Easiest dinner ever? Cook pre-made gnocchi according to directions. Drain and set aside. Pour some jarred tomato sauce in the bottom of an 8x8 or 9x9 baking dish, then a little sprinkle of the shredded 4 cheese blend, then a layer of gnocchi, then a layer of sauce, a thick layer of cheese, more gnocchi, repeat. End with tons of cheese. Bake at 350 for about 15 minutes until bubbling and melty on top.
